Breakfast Toasts 6 Ways!
As we all have been spending more time inside the past 5 weeks, it's meant more time in the kitchen. One of my favorite breakfasts is a well thought out toast. My go-to is to mash an avocado onto toasted bread and top with flaky sea salt, fresh black pepper, red chili flakes and extra virgin olive oil. But in the spirit of quarantine, and trying to find some small joys, I set out to make 6 savory and sweet toasts that are relatively easy, and beautiful.
This week, I’m sharing six toast recipes that include some of my favorite flavor combinations—to bring comfort to myself and those around me.
1. Place bread in toaster on medium.
2. Mix ricotta cheese and juice from half a lemon in a small bowl.
3. Remove bread from toaster and spread ricotta cheese onto toast using a spoon. The back of the spoon really helps to smooth the cheese from edge to edge.
4. Cut your avocado in half and peel skin off gently. Lay avocado pit side down and make small vertical slices of avocado. Take slices and lay them across the ricotta cheese.
5. Top with salt, pepper, lemon zest (I use a small cheese grater) and a drizzle of olive oil.

2. Remove bread from toaster and spread cream cheese onto toast using a knife.
3. Thinly slice cucumbers, I typically like about 7 slices.
4. Layer lox, cucumbers, and everything bagel seasoning and top with fresh chives.

2. Remove bread from toaster and spread peanut butter onto toast using a knife.
3. Thinly slice banana, I typically like about 10 slices. slice berries in half
4. Layer banana slices across the toast in a diagonal line. Place halved berries on either side of banana. Top with coconut flakes and a drizzle of honey.
1. Preheat your oven to 400, and place asparagus on a sheet pan with a light olive oil drizzle and some salt. Roast in the oven for 12 minutes.
2. Toast bread in toaster on medium.
3. Remove bread from toaster and goat cheese onto toast using a knife.
4. Lay the roasted asparagus across the toast lengthwise. Drape the prosciutto over asparagus and top with flaky sea salt and chopped fresh sage.

2. Remove bread from toaster and spread goat cheese onto toast using a knife.
3. Thinly slice strawberries lengthwise.
4. Layer strawberries across toast and top with chopped basil leaves and a honey drizzle.
1. Chop your tomatoes into tiny pieces and sauté in a skillet with olive oil and salt until softened.
2. Place bread in toaster on medium.
3. Remove bread from toaster and spread Vegan Garlic Spread-Dip from Trader Joe’s onto toast using a knife.
3. Thinly slice radish and layer on toast, I like to make a flower shape.
4. Layer sautéed tomatoes on top and sprinkle with sea salt and turmeric.
